Mushroom stew

Here’s a hearty recipe for mushroom stew that’s perfect for a cozy meal:

Mushroom Stew

Ingredients:

  • 1 lb (450 g) fresh mushrooms (cremini, button, or a mix), sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cups (720 ml) vegetable or chicken broth
  • 1 cup (240 ml) red or white wine (optional, or use additional broth)
  • 2 tbsp olive oil or butter
  • 2 tbsp soy sauce or tamari
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Optional: 1-2 potatoes, diced (for added heartiness)

Instructions:

  1. Sauté the Vegetables:

    • In a large pot or Dutch oven, heat the olive oil or butter over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  2. Add Mushrooms and Garlic:

    • Stir in the sliced mushrooms and minced garlic. Cook for about 5-10 minutes, until the mushrooms are browned and have released their moisture.
  3. Add Liquids and Seasonings:

    • Pour in the broth and wine (if using). Add soy sauce, thyme, rosemary, salt, and pepper. If you’re adding potatoes, toss them in now.
  4. Simmer:

    • Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 20-30 minutes, or until the vegetables (and potatoes, if added) are tender.
  5. Adjust Seasoning:

    • Taste the stew and adjust seasoning as needed. If you want a thicker stew, you can mash some of the potatoes or mushrooms against the side of the pot with a fork.
  6. Serve:

    • Ladle the stew into bowls and garnish with fresh parsley. Serve with crusty bread for a complete meal.
